Threebond 1207b, this is the best sealer I've used, can be used for oil and coolant, just make sure that the mating faces are clean and grease/ oil free, you can get it from Demon Tweeks/ eBay for about £15 a tube, you don't need much of it either, I've never had a leak whenever I've used it mate.

Stubby spanner or buy a halfords one and bend it/ shape it to fit around the manifold casting, it is a shit to get at, but it can be done mate.

You can get a new flexi welded in mate, most garages will do it, make sure you get a good quality one though as the cheap ones don't last long, maybe mongoose will sell you a flexi?, i think that they have stopped making the exhaust for the Gti-R now though so i doubt you would get a brand new...

Sounds like poor connections mate, it could be that the connection on the temp sensor itself is loose, although being as your speedo and tacho have stopped working i would be having a looky see behind the instrument cluster for loose connections and dodgy wiring as that seems the most likely cause.
