Head Gasket Thickness Query

Which factors determine the choice of head gasket thickness? Obviously if the heads been skimmed, but what else? The pulsars just came off the road for restoration and will be treated to a freshly built bottom end (87mm Pistons) and worked head (minimal, if any skimming)

Cheers

Has the block been decked? I.e are the pistons lower than the deck or higher and by what amount ,what compression ratio you want (only changes it by a small amount)
