bouncing AFR

hi,

recently i changed the gasket between the manifold and the turbo. Also changed the head gasket, so remove near everything and put them back (maybe the error come from there) because since this time i have an AFR that is bouncing from 16 to 10 at any time on vaccum, idle and light boost.

so here's my setup and what i did to find the issue.
std turbo, std maf, std injector. upgraded exaust/downpipe.
i have a emanage but i didn't changed anything and afr was ok before

new spark plug, check rotor, cap, replug many connector to be sure, clean air filter, blow air in the maf, reconnect maf and check connector, re-did all vaccum i was able,
i did a "trace" with my emanage maybe it can help.

i did a little "rev" on idle
here's a vid you'll see the afr/boost/rpm all at one.

also, i have a question, if i unplug the o2 sensor harness, is it normal that it doesn't show up in the dashboard ?

thank a lot for your help...

i got bad mpg and not that good performance.

when driving, it really depend, cruising sometimes i get a steady 15,6-16 afr, but other time i'm suprised in getting a 12.6, 13 while at low boost (2-3-4 psi) i even saw 10 like in the video i posted.
when wot it more in the 11.4 - 12 like it was before
