If I remember rightly there are two coolant temp sensors one for the ecu and one for the dashboard, for a guess could be the other sensor ? have you tried with one or the other fan disconnected incase thats the fault ? Im probably wrong with my suggestions but just trying to throw ideas in

How old is the car ? Might give a few more clues as to what to suggest ?

think most with sunroof's had a/c too think climate control was more rare on them

Got the drivers window switches they are the later ones with auto on them, tested and ready to use just needs your plastic cover on (2 or 3 screws from memory) not sure what its worth thou ?
